Many of you know me very well and know that decorating is more fun for me than cooking! There…I’ve now confessed to blogland around the world! If you follow my blog, Helen’s Decor, on Facebook, you already knew that. In fact I had even misplaced my recipes that weren’t saved on this computer yet. You know the ones that are printed off and folded and yes, stored in “that cookbook”…but which one? Really, I do love the cookbooks and reading them, yet I seem to fall back on my tried and true easy recipes.
Are you that way, too? Whenever possible the ingredients Bob and I prefer do not have real sugar. For example, canned fruit usually has Splenda in it when available at the “grocery store”. “Cool Whip” is either “Cool Whip Free” or “Lite Cool Whip” or the house brand of either. House brands work well in this fruit salad, too.
1 (8 ounce) carton Cool Whip Lite
1 (21 ounce) can strawberry pie filling
1 (15 1/4 ounce) can unsweetened crushed canned pineapple, drained
1 (15 ounce) can fruit cocktail in light syrup, undrained
1 cup miniature marshmallow
1 (14 ounce) can sweetened condensed milk
1 cup pecans, chopped
Step 1 Mix altogether and chill! You’re finished! My family has been known to enjoy this as breakfast, dessert, served with a holiday meal…it’s great! Our grands love it, too.
